MACHINE READY TO USE; Fix the machine to the table using the special vise and place the lever in the hole of the cylinders. When the machine is first used, it is necessary to clean with a dry cloth to remove excess oil. For cleaning the rollers, place a small amount of dough between them which should be disposed of later. PREPARATION OF MIXING;Measures for 6 people;Ingredients: 500g soft wheat flour and 5 eggs;You can use 1 glass of water instead of 5 eggs. For a delicious noodle, mix 250 g of soft wheat flour with 250 g of hard wheat flour. Do not add salt! Place the flour in a bowl and roll the eggs in the middle. Mix eggs with a fork and let it fully mixed with water. Knead the resulting dough by hand until it is completely uniform and thickened. If the dough is too hard, the water is too soft, add flour. A full consistency of dough should never stick to your fingers. Remove the dough from the container and place it on a slightly unlined table. If necessary, continue to knead the dough with your hands and cut into small pieces. Tip: do not use eggs removed from the fridge yet. PREPARATION OF POW AND PASEL PRODUCED WITH "ATLAS"; Pull the regulator of the machine outwards and the number 1 so that the two flat cylinders are fully open (approx. 3mm). Spread a piece of dough between the cylinders by turning the handle. Repeat this operation 5-6 times by doubling the dough and adding flour in the middle if needed. When the dough has a neat mould, the number of regulator 2, just slide 1 time between the rollers. Then place once at 3 until the desired thickness has reached again. (min.thickness – 0.2 mm n..9)Cut the dough into lengths of approximately 25 cm in width with a knife (=10") insert the lever into the hole of the cutting rollers and pull out the dough to obtain the preferred pasta type. If desired, you can get fine pasta (1.5 mm TAGLIER) through the front thread or thick pasta (6.5 mm FETTUCCINE) through the middle thread. Note 1: If the rollers cannot 'cut' or do not cut the dough well, this means that the dough is too soft. In this case, we recommend that you put the dough between the flat rollers after adding flour to the mixture. Note 2: Please note that the dough is not too hard, otherwise the rollers cannot pick up the dough. Boil plenty of salt water to drain the pasta. (about 4 litres for 1/2 kg of pasta). Fresh pasta is cooked in a short time from 2 minutes to 5 minutes, depending on its thickness. Stir carefully and place through the sieve after cooking. MACHINE CARE; 1-During use, clean the scrapers under the flat cylinders with a piece of kitchen paper occasionally. 2. Never wash the machine with water or dishwasher. 3. To clean the machine after use, use use a brush and a wooden stick 4. If necessary, drop a few drops of vaseline oil at the ends of the cutting rollers. Do not thread knives or kitchen cloths between the rollers. 6-After use, store the machine and accessories in their own box.
