Like all of MasterClass’s best-selling, award-winning* bakeware, this eclair mould is made of warp-resistant, 1 mm-thick carbon steel, with rolled edges to prevent water build-up and rust. It’s finished with a double layer of the Quantum II non-stick coating, sandblasted to its surface for better adhesion. With its specially shaped holes, this eclair baking tray helps shape choux pastry as it rises. And thanks to its exceptional heat transfer properties, the results should be crisp, airy, and delicious.
